With its simplicity and low cost, this Air Fryer Paleo Seed Brittle is the perfect snack for those of us with restricted diets. It's almost like magic: with just a few raw seeds, some melted coconut oil, and a handful of other ingredients, you have yourself a crunchy, healthy treat that's gluten-free, grain-free, paleo, and vegan.
It was in the 19th century when a young inventor named George Crum, working in a lakeside resort in Saratoga Springs, New York, was asked to make french fries for a particularly difficult customer. The customer sent the fries back several times, complaining they were too thick. In a fit of pique, Crum sliced the potatoes paper-thin and fried them until they were extra crispy. To his surprise, the customer loved them, and so potato chips were born.

1 cup mixed raw seeds (such as pumpkin, sunflower, flax, and chia)
1/4 cup melted coconut oil
1/4 cup maple syrup
1 tablespoon raw honey
1/2 teaspoon vanilla extract
1/4 teaspoon sea salt
Instructions

In a large bowl, combine the seeds, melted coconut oil, maple syrup, honey, vanilla extract, and sea salt.
Mix until all ingredients are well combined.

Cook for 6-8 minutes, or until the seed mixture is golden brown and crispy.
Remove from the air fryer and let cool for a few minutes before breaking into pieces.
Serve and enjoy!
Why It Works
The high heat of the air fryer helps to quickly toast the seeds, giving them a nutty flavor.
The maple syrup and honey add a touch of sweetness, while the sea salt helps to balance out the flavors.
The resulting seed brittle is a crunchy, healthy snack that's perfect for on-the-go.
