These savory egg bites are a quick and easy way to get a healthy breakfast or lunch. They're made with zucchini, sweet potato, and eggs, and they're packed with flavor. The best part is that they can be made in the air fryer, so they're quick and easy to clean up.
I first came up with the idea for these egg bites when I was looking for a way to use up some leftover zucchini and sweet potato. I had been roasting them in the oven, but I wanted to try something different. I decided to try making them in the air fryer, and they turned out perfectly! The air fryer cooks them evenly and quickly, and the result is a delicious, healthy, and easy-to-make breakfast or lunch.
