These roasted vegetable and feta skewers are a quick and easy way to get your veggie fix. They're perfect for a light lunch or dinner, or as a side dish for grilled meats or fish. The vegetables are roasted until tender and slightly browned, and the feta cheese melts and gets crispy. The skewers are seasoned with oregano, salt, and pepper, and they're drizzled with olive oil before cooking.
The idea for these skewers came to me one day when I was looking for a quick and easy way to cook vegetables. I had some zucchini, yellow squash, bell peppers, and cherry tomatoes on hand, and I thought they would be delicious roasted on skewers. I also had some feta cheese in the fridge, so I decided to add that to the skewers as well. The skewers turned out so well that I've been making them ever since. They're a favorite of my family and friends, and I'm sure you'll enjoy them too.

Why It Works
Roasting the vegetables on skewers allows them to cook evenly and get slightly browned.
The feta cheese melts and gets crispy, adding a salty and tangy flavor to the skewers.
The oregano, salt, and pepper add a flavorful seasoning to the skewers.
The olive oil helps to keep the vegetables moist and prevents them from sticking to the skewers.
