Air Fryer Whole30 Paleo Chicken and Veggie Stir-Fry with Cashews

Ingredients
1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
1 tablespoon avocado oil
1/2 teaspoon salt
1/4 teaspoon black pepper
1 cup broccoli florets
1 cup cauliflower florets
1/2 cup carrots, peeled and sliced
1/4 cup cashews
Instructions
Preheat the air fryer to 400 degrees F (200 degrees C).
In a large bowl, toss the chicken with the avocado oil, salt, and pepper.
Add the chicken to the air fryer basket and cook for 10 minutes, or until cooked through.
Add the broccoli, cauliflower, and carrots to the air fryer basket and cook for 5 minutes.
Stir in the cashews and cook for 2 minutes more.
Serve immediately.
