Ingredients
  • 1 large egg
  • 2 oz baby spinach
  • 1/4 medium avocado, sliced
  • 1/4 cup shredded cheddar cheese (optional)
  • 1/4 tsp salt (more to taste)
  • 1/4 tsp black pepper (more to taste)
  • 1 large burrito-sized tortilla
  • Avocado oil spray
Instructions
  1. Preheat air fryer to 350 degrees F (175 degrees C).
  2. Spray a large piece of aluminum foil with avocado oil spray.
  3. Place the tortilla on the foil.
  4. Crack the egg into the center of the tortilla.
  5. Top with the spinach, avocado, cheese, salt, and pepper.
  6. Fold the sides of the tortilla over the filling, starting with the bottom, then the sides, and finally the top.
  7. Spray the top of the burrito with avocado oil.
  8. Place the foil packet in the air fryer and cook for 5-7 minutes, or until the egg is cooked through and the cheese is melted.
