Crispy Air Fryer Broccoli and Cheddar Breakfast Bites
These crispy air fryer broccoli and cheddar breakfast bites are the perfect grab-and-go breakfast or snack. They're made with just a few simple ingredients, and they're ready in under 15 minutes.
I first came up with this recipe when I was looking for a way to use up some leftover broccoli. I had tried roasting it, but it always came out soggy. I decided to try cooking it in the air fryer, and it turned out perfectly crispy! I added some cheddar cheese and eggs to the mix, and these breakfast bites were born.
Prep time: 10 | Cook time: 10 | Serves: 4
Ingredients
1 head of broccoli, chopped
1/2 cup shredded cheddar cheese
2 eggs
1/4 cup almond milk
1/4 tsp salt
1/4 tsp pepper
Instructions
Preheat your air fryer to 375 degrees F (190 degrees C).
In a large bowl, combine the broccoli, cheddar cheese, eggs, almond milk, salt, and pepper.
Mix well.
Drop the mixture by rounded tablespoons onto a parchment paper-lined air fryer tray.
Cook for 8-10 minutes, or until the bites are golden brown and cooked through.
Serve immediately.
Why It Works
The air fryer cooks the broccoli quickly and evenly, resulting in a crispy texture.
The cheddar cheese melts and becomes gooey, adding a delicious flavor to the bites.
The eggs bind the ingredients together and help to create a fluffy texture.
