Savory Air Fryer Sweet Potato and Black Bean Tacos

Ingredients
  • 2 sweet potatoes, peeled and cubed
  • 1 tablespoon olive oil
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 can (15 ounces) black beans, rinsed and drained
  • 1/2 cup chopped onion
  • 1/2 cup chopped cilantro
  • 12 corn tortillas
Instructions
  1. Preheat the air fryer to 400 degrees F (200 degrees C).
  2. Toss the sweet potatoes with the olive oil, chili powder, cumin, salt, and black pepper. Spread the sweet potatoes in a single layer on the air fryer basket and cook for 10-12 minutes, or until crispy and tender.
  3. While the sweet potatoes are cooking, heat the black beans in a saucepan over medium heat. Add the onion and cilantro and cook for 5 minutes, or until the onion is softened.
  4. To assemble the tacos, place a scoop of sweet potatoes and black beans on a corn tortilla. Top with your favorite toppings, such as salsa, guacamole, or sour cream.
