Creamy Air Fryer Spinach and Feta Breakfast Quesadillas

The idea for these breakfast quesadillas came to me one morning when I was trying to think of a creative way to use up some leftover spinach. But I wanted something a little more portable and easy to eat for breakfast. That's when I had the idea to make these quesadillas. Ingredients
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 (10 ounce) package frozen spinach, thawed and drained
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup chopped fresh cilantro
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
Instructions
  1. Preheat your air fryer to 375 degrees F (190 degrees C).
  2. Heat the olive oil in a large skillet over medium heat.
  3. Add the onion and cook until softened.
  4. Add the garlic and cook for 1 minute more.
  5. Add the spinach, feta cheese, cilantro, salt, and pepper to the skillet.
  6. Stir to combine and cook until the spinach is wilted.
  7. Place 1/4 cup of the spinach mixture in the center of each tortilla.
  8. Fold the tortillas in half and place them in the air fryer basket.
  9. Cook for 5-7 minutes, or until the tortillas are golden brown and the cheese is melted.
