Ingredients
  • 1 medium zucchini, cut into 1/2-inch thick fries
  • 1/4 cup olive oil or avocado oil
  • 1/4 teaspoon dried oregano
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup grated Parmesan cheese (optional)
  • 1/4 cup chopped fresh parsley (optional)
Instructions
  1. Preheat your air fryer to 400 degrees F (200 degrees C).
  2. In a large bowl, combine the zucchini, olive oil, oregano, salt, and pepper.
  3. Toss to coat.
  4. Place the zucchini fries in a single layer in the air fryer basket.
  5. Cook for 10-12 minutes, or until golden brown and crispy.
  6. Sprinkle with Parmesan cheese and parsley, if desired.
  7. Serve immediately.
