Ingredients
  • 1 ripe avocado
  • 1/2 cup smoked salmon
  • 2 large eggs
  • 1/4 cup chopped red onion
  • 1/4 cup chopped cilantro
  • 1 tablespoon olive oil
  • Salt and pepper to taste
Instructions
  1. Preheat air fryer to 350 degrees F (175 degrees C).
  2. Cut the avocado in half, remove the pit, and scoop out the flesh into a small bowl.
  3. Mash the avocado with a fork until smooth and creamy.
  4. Crack the eggs into a separate bowl and beat until well combined.
  5. In a small skillet, heat the olive oil over medium heat.
  6. Pour the eggs into the skillet and cook until set, about 2 minutes per side.
  7. Transfer the avocado mixture to the air fryer basket and cook for 5 minutes, or until heated through.
  8. Top the avocado mixture with the smoked salmon, eggs, red onion, and cilantro.
  9. Season with salt and pepper to taste.
