Ingredients
  • 1 pound boneless, skinless chicken breasts
  • 1 tablespoon olive oil

  • 1 red bell pepper, cut into chunks
  • 1/2 cup chopped onion

Instructions
  1. Preheat oven to 400 degrees F (200 degrees C).
  2. Place the chicken breasts on a baking sheet and drizzle with olive oil. Season with salt and pepper.
  3. Roast in the preheated oven for 20-25 minutes, or until cooked through.
  4. While the chicken is roasting, toss the broccoli, bell pepper, onion, and garlic with olive oil. Season with salt and pepper.
