Ingredients
1/2 pound mushrooms, sliced
1/2 cup chopped spinach
1/4 cup chopped onion
1 clove garlic, minced
1/2 teaspoon salt
1/4 teaspoon black pepper
1 tablespoon olive oil
4 large eggs
Instructions
In a large skillet, heat olive oil over medium heat.
Add mushrooms, spinach, onion, garlic, salt, and pepper.
Cook until mushrooms are softened and spinach is wilted, about 5 minutes.
Remove from heat and let cool slightly.
Preheat air fryer to 375°F (190°C).
Beat eggs in a bowl.
Spray a grill pan with cooking spray.
Pour 1/4 cup of egg mixture into the prepared pan.
