Ingredients
  • 1/2 pound mushrooms, sliced
  • 1/2 cup chopped spinach
  • 1/4 cup chopped onion
  • 1 clove garlic, minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon olive oil
  • 4 large eggs
Instructions
  1. In a large skillet, heat olive oil over medium heat.
  2. Add mushrooms, spinach, onion, garlic, salt, and pepper.
  3. Cook until mushrooms are softened and spinach is wilted, about 5 minutes.
  4. Remove from heat and let cool slightly.
  5. Preheat air fryer to 375°F (190°C).
  6. Beat eggs in a bowl.
  7. Spray a grill pan with cooking spray.
  8. Pour 1/4 cup of egg mixture into the prepared pan.
