Roasted Butternut Squash and Sausage Breakfast Skillet
A hearty and flavorful breakfast skillet that's perfect for a weekend brunch or a quick and easy weekday meal. The roasted butternut squash adds a touch of sweetness and the sausage and vegetables provide a savory balance. This dish is also a great way to use up leftover roasted squash.
This recipe was inspired by my love of breakfast skillets and my desire to find a way to use up leftover roasted butternut squash. I started by browning some breakfast sausage in a skillet, then added some chopped onion and bell pepper. Once the vegetables were softened, I added the roasted butternut squash and cooked everything together until heated through. The final touch was a sprinkling of fresh parsley. The result was a delicious and satisfying breakfast skillet that was perfect for a weekend brunch or a quick and easy weekday meal.

Ingredients
1 medium butternut squash, peeled and cubed
1 tablespoon of olive oil
1/2 teaspoon of salt
1/2 teaspoon of black pepper
8 ounces of breakfast sausage
1/2 onion, chopped
1 bell pepper, chopped
1/4 cup of chopped fresh parsley
Instructions
Preheat oven to 425 F.
Toss butternut squash cubes with olive oil, salt, and pepper. Spread on a baking sheet and roast for 20-25 minutes, or until tender and slightly browned.
While the squash is roasting, cook the breakfast sausage in a skillet over medium heat until browned. Drain any excess grease.
Add the onion and bell pepper to the skillet and cook until softened, about 5 minutes.
Add the roasted butternut squash to the skillet and stir to combine.
Cook for an additional 5 minutes, or until the squash is warmed through.
Sprinkle with fresh parsley and serve immediately.
