Ingredients
  • 1 tablespoon olive oil
  • 1/2 cup chopped onion
  • 1/2 cup chopped green bell pepper
  • 1/2 cup chopped red bell pepper
  • 1 (10 ounce) package frozen spinach, thawed and squeezed dry
  • 1/2 cup cooked and crumbled bacon
  • 6 large eggs
  • 1/2 cup shredded cheddar cheese
  • 6 (8 inch) whole wheat tortillas
Instructions
  1. Preheat air fryer to 350 degrees F (175 degrees C).
  2. In a large skillet over medium heat, heat olive oil. Add onion, green bell pepper, and red bell pepper and cook until softened.
  3. Add spinach and bacon to the skillet and cook until heated through.
  4. In a bowl, whisk together eggs, cheese, salt, and pepper.
  5. Pour egg mixture into the skillet and cook until set.
  6. Place a tortilla in the air fryer basket and top with 1/6 of the egg mixture.
  7. Cook for 5-7 minutes, or until golden brown and cooked through.
  8. Repeat with remaining tortillas.
