Air Fryer Paleo Breakfast Burrito with Roasted Veggies

Ingredients
- 1 sweet potato, peeled and diced
- 1 zucchini, diced
- 1/2 red onion, diced
- 1 tablespoon olive oil
- Salt and pepper to taste
- 2 eggs
- 1/4 cup shredded cheddar cheese (optional)
- 1/4 cup salsa
- 1 large tortilla
Instructions
- Preheat air fryer to 400 degrees Fahrenheit.
- Toss sweet potato, zucchini, and onion with olive oil, salt, and pepper.
- Spread vegetables in an even layer in the air fryer basket.
- Cook for 10-12 minutes, or until vegetables are tender and browned.
- While vegetables are cooking, cook eggs in a skillet over medium heat.
- Warm tortilla in the air fryer for 1-2 minutes, or until softened.
- Place vegetables, eggs, cheese, and salsa in the center of the tortilla.
- Fold up sides of tortilla and enjoy!
