Ingredients
  • 1 sweet potato, peeled and diced
  • 1 zucchini, diced
  • 1/2 red onion, diced
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • 2 eggs
  • 1/4 cup shredded cheddar cheese (optional)
  • 1/4 cup salsa
  • 1 large tortilla
Instructions
  1. Preheat air fryer to 400 degrees Fahrenheit.
  2. Toss sweet potato, zucchini, and onion with olive oil, salt, and pepper.
  3. Spread vegetables in an even layer in the air fryer basket.
  4. Cook for 10-12 minutes, or until vegetables are tender and browned.
  5. While vegetables are cooking, cook eggs in a skillet over medium heat.
  6. Warm tortilla in the air fryer for 1-2 minutes, or until softened.
  7. Place vegetables, eggs, cheese, and salsa in the center of the tortilla.
  8. Fold up sides of tortilla and enjoy!
