Savory Zucchini and Sweet Potato Egg Bites
These savory zucchini and sweet potato egg bites are the perfect way to start your day. They're packed with protein and healthy vegetables, and they're easy to make in the air fryer. To make the egg bites, simply grate one zucchini and one sweet potato. Then, whisk together six eggs, 1/4 cup of almond milk, 1/4 teaspoon of salt, and 1/4 teaspoon of pepper. Stir in the zucchini, sweet potato, and 1/4 cup each of chopped fresh parsley and cilantro. Spray a muffin tin with cooking spray and fill each muffin cup with the egg mixture. Place the muffin tin in the air fryer and cook at 350 degrees F for 15-20 minutes, or until the eggs are set. Let the egg bites cool for a few minutes before serving.
I first came up with this recipe when I was looking for a healthy and easy way to use up some leftover zucchini and sweet potato. I had been making egg bites for breakfast for a while, but I wanted to try something different. I decided to add the zucchini and sweet potato, and the result was delicious. These egg bites are a great way to get your vegetables in first thing in the morning. They're also a good source of protein, and they're easy to make ahead of time. I like to make a batch on the weekend and then reheat them throughout the week for breakfast or lunch.
