Paleo Ginger and Lime Chicken Skewers
When it comes to easy weeknight dinners, grilled chicken is hard to beat. It's quick, healthy, and can be seasoned any number of ways. But if you're looking for something a little more flavorful than your average grilled chicken breast, these paleo ginger and lime chicken skewers are the perfect solution. The marinade is made with a blend of fresh ginger, lime juice, olive oil, salt, and pepper, which gives the chicken a bright and zesty flavor. And because we're using boneless, skinless chicken breasts, there's no need to worry about over- or undercooking—simply skewer them up and cook on high heat for 20 minutes or until cooked through. They're perfect for a quick and easy weeknight dinner or a party appetizer.
The story behind these skewers is a long and winding one, but it all started with a trip to Thailand. Back in 2007, I was backpacking through Southeast Asia and I had the pleasure of eating some of the most delicious street food I've ever had in my life. One of my favorite dishes was a simple grilled chicken skewer that was marinated in a blend of ginger, lime juice, and fish sauce. I was so impressed by the flavors that I knew I had to recreate them at home. When I got back to the States, I started experimenting with different recipes until I finally came up with one that I was happy with. These skewers are a bit of a hybrid between the Thai street food I had and the American-style grilled chicken skewers that I grew up with. They're made with boneless, skinless chicken breasts instead of the traditional thigh meat, and I've added a bit of olive oil to the marinade to help keep the chicken moist. But the overall flavor profile is very similar, with a bright and zesty blend of ginger, lime, and fish sauce. I've been making these skewers for years now, and they've always been a hit with my friends and family. They're perfect for a quick and easy weeknight dinner or a party appetizer, and they're always a crowd-pleaser.

Why It Works
  • The combination of fresh ginger, lime juice, and olive oil in the marinade gives the chicken a bright and zesty flavor.
  • Using boneless, skinless chicken breasts makes the skewers easy to cook and ensures that they will be cooked through evenly.
  • Grilling the skewers over high heat helps to caramelize the exterior and lock in the juices.
