Ingredients
2 pounds ripe tomatoes, chopped
1 cucumber, peeled and chopped
1 green bell pepper, chopped
1 red onion, chopped
2 cloves garlic, minced
1/2 cup olive oil
1/4 cup red wine vinegar
2 tablespoons chopped fresh parsley
Salt and pepper to taste
Instructions
Combine all of the ingredients in a blender and puree until smooth.
Transfer the soup to a bowl and refrigerate for at least 2 hours, or overnight.
Serve chilled, garnished with additional parsley and croutons.
To make the croutons, heat the olive oil in a skillet over medium heat.
