Ingredients
  • 2 pounds ripe tomatoes, chopped
  • 1 cucumber, peeled and chopped
  • 1 green bell pepper, chopped
  • 1 red onion, chopped
  • 2 cloves garlic, minced
  • 1/2 cup olive oil
  • 1/4 cup red wine vinegar
  • 2 tablespoons chopped fresh parsley
  • Salt and pepper to taste
Instructions
  1. Combine all of the ingredients in a blender and puree until smooth.
  2. Transfer the soup to a bowl and refrigerate for at least 2 hours, or overnight.
  3. Serve chilled, garnished with additional parsley and croutons.
  4. To make the croutons, heat the olive oil in a skillet over medium heat.
  5. Add the chorizo and cook until browned.
  6. Add the bread cubes and cook until golden brown and crispy.
  7. Season with salt and pepper to taste.
  8. Serve the gazpacho with the croutons on top.
