Ingredients
  • 1 pound dried chickpeas
  • 1/2 cup chopped onion
  • 1/2 cup chopped parsley
  • 1/2 cup chopped cilantro
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1/2 teaspoon ground coriander
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
Instructions
  1. Soak the chickpeas in a bowl of water overnight.
  2. Drain the chickpeas and rinse them well.
  3. In a food processor, combine the chickpeas, onion, parsley, cilantro, garlic, cumin, coriander, salt, and pepper.
  4. Process until the mixture is finely chopped but not pureed.
  5. Form the mixture into 1-inch balls.
  6. Place the falafel balls on a baking sheet and bake at 400 degrees F for 20 minutes, or until they are golden brown.
  7. Serve the falafel bowls with your favorite toppings, such as tzatziki, hummus, and vegetables.
