Teriyaki Turkey Bowls with Roasted Broccolini
These teriyaki turkey bowls with roasted broccolini are a quick and easy weeknight meal that's packed with flavor. The turkey meatballs are made with ground turkey, soy sauce, honey, rice vinegar, sesame oil, ginger, garlic powder, and black pepper. I first developed this recipe back in 2014, when I was looking for a quick and easy weeknight meal that was also healthy and flavorful. I had some ground turkey in the fridge, and I wanted to do something different with it than the usual burgers or tacos. I decided to make turkey meatballs, and I flavored them with soy sauce, honey, rice vinegar, sesame oil, ginger, garlic powder, and black pepper. I cooked them in the air fryer until cooked through, then served them over roasted broccolini. The broccolini was tossed with olive oil, salt, and pepper, then roasted in the oven until tender. The bowls were drizzled with additional teriyaki sauce, if desired.

Ingredients
  • 1 pound ground turkey
  • 1/4 cup soy sauce
  • 1/4 cup honey
  • 1 tablespoon rice vinegar
  • 1 teaspoon sesame oil
  • 1 teaspoon ground ginger
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon black pepper
Instructions
  1. Preheat your air fryer to 400 degrees F (200 degrees C).
  2. In a medium bowl, combine the ground turkey, soy sauce, honey, rice vinegar, sesame oil, ginger, garlic powder, and black pepper. Mix until well combined.
  3. Form the turkey mixture into 8 equal-sized meatballs.
  4. Place the meatballs in the air fryer basket and cook for 10 minutes, or until cooked through.
  5. While the meatballs are cooking, toss the broccolini with olive oil, salt, and pepper.
  6. Spread the broccolini in a single layer on a baking sheet and roast in the oven at 425 degrees F (220 degrees C) for 15-20 minutes, or until tender.
  7. To serve, place a meatball and some roasted broccolini in a bowl.
  8. Drizzle with additional teriyaki sauce, if desired.
