Creamy Sun-Dried Tomato Chicken with Caponata
This simple yet flavorful dish combines the tanginess of sun-dried tomatoes with the richness of cream cheese and the freshness of a caponata made with red onion, green bell pepper, and black olives. The result is a juicy, tender chicken that's perfect for a quick and easy weeknight meal.
The inspiration for this recipe came to me on a sunny afternoon as I was browsing through my favorite cookbook. I came across a recipe for chicken breasts with sun-dried tomatoes and cream cheese, and it immediately caught my eye. I love the combination of sun-dried tomatoes and cream cheese, and I thought it would be a great way to add some flavor to chicken breasts. I also wanted to add some vegetables to the dish, so I decided to make a caponata to serve alongside the chicken. Caponata is a Sicilian dish made with eggplant, celery, onions, and tomatoes. It's a flavorful and versatile dish that can be served as a side dish or as a topping for pizza or pasta. I made my caponata with red onion, green bell pepper, and black olives, and it turned out perfectly. The caponata added a nice sweetness and acidity to the dish, and it complemented the chicken perfectly.
