Roasted Vegetable and Chicken Salad

Ingredients
  • 1 pound boneless, skinless chicken breasts
  • 1 tablespoon olive oil

  • 1/4 teaspoon black pepper
  • 1 cup broccoli florets
  • 1 cup cauliflower florets
  • 1 cup carrots, peeled and chopped
  • 1/4 cup red onion, thinly sliced
Instructions
  1. Preheat the air fryer to 400°F (200°C).
  2. Season the chicken breasts with the olive oil, oregano, thyme, salt, and pepper.
  3. Place the chicken breasts in the air fryer basket and cook for 10-12 minutes, or until cooked through.
  4. While the chicken is cooking, toss the broccoli, cauliflower, carrots, and red onion with olive oil.
  5. Once the chicken is cooked, remove it from the air fryer and let it rest for a few minutes.
  6. Add the vegetables to the air fryer basket and cook for 10-12 minutes, or until tender and slightly browned.
  7. Slice the chicken and add it to a bowl with the roasted vegetables.
  8. Drizzle with the desired amount of dressing and toss to coat.
