Whole30 Breakfast Tacos with Sweet Potato Hash
Whole30 is a restrictive elimination diet that bans sugar, grains, dairy, legumes, and alcohol. So what's left? Plenty, especially if you're a fan of breakfast tacos. These little handhelds are packed with flavor, and they're easy to make with a few simple ingredients. The base of these tacos is a sweet potato hash, seasoned with chili powder, cumin, salt, and pepper. The hash is cooked in an air fryer, which gives it a crispy exterior and a tender interior. Once the hash is cooked, it's time to add the eggs. You can cook them any way you like, but we recommend scrambling them or frying them into sunny-side up perfection. Finally, assemble the tacos with your favorite toppings. We like ours with salsa, guacamole, and sour cream. But you can use whatever you like. Enjoy!
Back in the day, breakfast tacos weren't so much a thing. Oh, sure, people had been eating tacos for breakfast for centuries, but they were typically filled with simple ingredients like eggs, cheese, and beans. But in the past few decades, breakfast tacos have undergone a renaissance of sorts. Today, you can find breakfast tacos filled with everything from bacon and eggs to avocado and smoked salmon. The Whole30 breakfast taco is a relative newcomer to the breakfast taco scene. But it's quickly become a favorite among those who follow the Whole30 diet. That's because it's a delicious and satisfying way to start your day without breaking any of the Whole30 rules. But don't let the name fool you. You don't have to be on the Whole30 diet to enjoy these tacos. They're a great option for anyone who's looking for a healthy and flavorful breakfast. So what makes these tacos so special? It all starts with the sweet potato hash. Sweet potatoes are a good source of fiber, vitamins, and minerals. And when they're cooked in an air fryer, they develop a crispy exterior and a tender interior that's simply irresistible. The eggs add protein and richness to the tacos. And the salsa, guacamole, and sour cream add flavor and texture. The result is a taco that's both satisfying and delicious.
