Air Fryer Chicken and Vegetable Stir-Fry with Brown Rice
This air fryer chicken and vegetable stir-fry is a quick and easy weeknight meal that's packed with flavor. The chicken is cooked to perfection in the air fryer, and the vegetables are tender-crisp. Serve over brown rice for a complete meal.
I've always been a fan of stir-fries, but I never really liked making them at home. They always seemed to take too long, and the chicken always ended up dry. But then I discovered the air fryer, and everything changed. The air fryer cooks chicken quickly and evenly, and it gives it a nice crispy exterior. And because the air fryer circulates hot air around the food, the vegetables cook quickly and evenly, too. This recipe is my go-to weeknight stir-fry. It's quick, easy, and delicious.

Why It Works
The air fryer cooks the chicken quickly and evenly, resulting in juicy, tender chicken with a crispy exterior.
The vegetables are cooked quickly and evenly in the air fryer, resulting in tender-crisp vegetables that retain their nutrients.
The combination of chicken and vegetables makes for a complete meal that is both satisfying and nutritious.
