The Whole30 Paleo Breakfast Scramble was born out of a desire to create a healthy and satisfying breakfast option that was also compliant with the Whole30 and paleo diets. I wanted a scramble that was packed with flavor and nutrients, but that was also easy to make and could be tailored to my liking.

Ingredients
  • 1 tablespoon olive oil
  • 1/2 onion, chopped
  • 1/2 green bell pepper, chopped
  • 1/2 red bell pepper, chopped
  • 1 (15 ounce) can black beans, rinsed and drained
  • 1 (15 ounce) can corn, drained
  • 1 cup frozen peas
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
Instructions
  1. Heat the olive oil in a large skillet over medium heat.
  2. Add the onion, green bell pepper, and red bell pepper to the skillet and cook until softened, about 5 minutes.
  3. Add the black beans, corn, and peas to the skillet and cook until heated through, about 3 minutes.
  4. Season with salt and pepper to taste.
  5. Serve immediately.
