Air-Fryer Chicken and Vegetable Curry

Ingredients
  • 1 tbsp coconut oil, melted
  • 1 lb boneless, skinless chicken thighs, cut into 1-inch pieces
  • 1 small onion
  • 1 small red bell pepper, thinly sliced
  • 1 cup broccoli florets
  • ½ cup water
  • ¼ cup red curry paste
  • 1 & 1/3 cups unsweetened coconut milk
  • Fresh lime wedges, for serving
Instructions
  1. Preheat an air fryer to 400 degrees F (200 degrees C).
  2. Season the chicken with salt and pepper.
  3. Add the chicken to the air-fryer basket and cook for 3–4 minutes.
  4. Remove and set aside.
  5. Add the onion and bell pepper to the air-fryer basket and cook until softened for 4–6 minutes.
  6. Add the broccoli and cook until tender-crisp for 3–4 minutes.
  7. Add the water, curry paste, and coconut milk to the air-fryer basket.
  8. Cook everything together for 4–5 minutes, or until the chicken is cooked through.
