Mediterranean Grilled Halloumi Skewers with Lemon Herb Marinade
A savory and refreshing dish that combines the salty tang of halloumi with the bright flavors of a lemon-herb marinade and grilled vegetables. Perfect for a summer cookout or as a light and flavorful weeknight meal.
My love affair with halloumi began years ago while backpacking through the Mediterranean. The salty, grilled cheese became a staple of my diet, providing a much-needed break from the otherwise monotonous flavors of trail mix and freeze-dried meals.
Upon returning home, I knew I had to recreate the magic of those grilled halloumi skewers. I experimented with various marinades and grilling techniques, ultimately landing on this recipe that perfectly captures the flavors of the Mediterranean.
Inspired by the vibrant street food markets of Athens and the rustic tavernas of Cyprus, this recipe combines halloumi with a vibrant blend of lemon, herbs, and grilled vegetables. The lemon marinade tenderizes the halloumi while infusing it with a zesty brightness. The grilled vegetables add a smoky depth and sweetness that complements the halloumi's salty tang.
Whether you're grilling these skewers for a casual gathering or as part of a more elaborate Mediterranean feast, they are sure to impress your taste buds and transport you to the sun-drenched landscapes of the Mediterranean.

Ingredients
1 block of halloumi cheese, cut into cubes
1 lemon, juiced and zested
2 cloves of garlic, minced
1/4 cup olive oil
1 tablespoon chopped fresh herbs (such as parsley, oregano, and thyme)
Salt and pepper to taste
Cherry tomatoes
Red onion, cut into chunks
Bell peppers, cut into chunks
Instructions
In a small bowl, whisk together lemon juice, lemon zest, garlic, olive oil, chopped herbs, salt, and pepper to make the marinade.
Thread the halloumi cheese cubes, cherry tomatoes, red onion, and bell peppers onto skewers.
Place the skewers in a shallow dish and pour the marinade over them, turning to coat evenly. Let marinate for at least 30 minutes.
Preheat grill to medium-high heat. Grill the skewers for 2-3 minutes per side, until the halloumi is golden brown and the vegetables are tender.
Serve the grilled halloumi skewers hot, garnished with additional herbs and a squeeze of fresh lemon juice.
Why It Works
The combination of halloumi's salty tang and the bright flavors of the lemon-herb marinade creates a tantalizing contrast that awakens the taste buds.
Grilling the skewers enhances the flavors of both the halloumi and the vegetables, creating a smoky depth that complements the zesty marinade.
Using fresh herbs, such as parsley, oregano, and thyme, brings a vibrant herbaceousness to the dish, evoking the aromatic flavors of Mediterranean cuisine.
Marinating the halloumi for at least 30 minutes allows the flavors to penetrate deeply, resulting in a tender and flavorful cheese.
Grilling the skewers over medium-high heat quickly sears the halloumi, creating a golden-brown exterior while keeping the interior tender and juicy.
