Ingredients
  • 1 large sweet potato, peeled and cubed
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 large eggs
  • 2 slices bacon, cooked and chopped
  • 1/4 cup chopped avocado
  • 1/4 cup chopped fresh cilantro
Instructions
  1. Preheat oven to 400 degrees F (200 degrees C).
  2. Toss sweet potatoes with olive oil, salt, and pepper.
  3. Spread sweet potatoes on a baking sheet and roast for 20-25 minutes, or until tender and browned.
  4. While the sweet potatoes are roasting, cook the eggs in a pan over medium heat.
  5. Assemble burritos by placing sweet potatoes, eggs, bacon, avocado, and cilantro in the center of a large tortilla.
  6. Fold up the sides of the tortilla and roll up tightly.
  7. Serve immediately or wrap in foil and store in the refrigerator for later.
