Ingredients
1 large sweet potato, peeled and cubed
1 tablespoon olive oil
1/2 teaspoon salt
1/4 teaspoon black pepper
2 large eggs
2 slices bacon, cooked and chopped
1/4 cup chopped avocado
1/4 cup chopped fresh cilantro
Instructions
Preheat oven to 400 degrees F (200 degrees C).
Toss sweet potatoes with olive oil, salt, and pepper.
Spread sweet potatoes on a baking sheet and roast for 20-25 minutes, or until tender and browned.
While the sweet potatoes are roasting, cook the eggs in a pan over medium heat.
Assemble burritos by placing sweet potatoes, eggs, bacon, avocado, and cilantro in the center of a large tortilla.
Fold up the sides of the tortilla and roll up tightly.
