Air Fryer Chicken and Vegetable Soup

This recipe is the result of my efforts, and I'm happy to report that it's just as delicious as the classic version, but it only takes a fraction of the time to make.

Ingredients
  • 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 1/2 cup chopped kale or spinach
Instructions
  1. Preheat your air fryer to 400 degrees F (200 degrees C).
  2. Place the chicken in a bowl and drizzle with olive oil. Season with salt and pepper.
  3. Spread the chicken in a single layer in the air fryer basket.
  4. Cook for 10-12 minutes, or until cooked through.
  5. Add the onion, carrots, celery, and garlic to the air fryer basket.
  6. Cook for 5-7 minutes, or until softened.
  7. Add the chicken broth and kale to the air fryer basket.
  8. Cook for 3-5 minutes, or until the kale is wilted.
