Whole30 Breakfast Bowl with Roasted Veggies

Ingredients
  • 1 large sweet potato, peeled and chopped
  • 1 large zucchini, chopped
  • 1 large bell pepper, chopped
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • 1/2 pound breakfast sausage (Whole30-compliant)
  • 4 eggs
Instructions
  1. Preheat air fryer to 400 degrees Fahrenheit.
  2. In a large bowl, combine sweet potato, zucchini, bell pepper, olive oil, salt, and pepper. Toss to coat.
  3. Spread vegetables in a single layer in the air fryer basket and cook for 15 minutes, or until tender and lightly browned.
  4. While the vegetables are cooking, cook breakfast sausage according to package directions.
  5. In a separate bowl, whisk together eggs.
  6. Spray a small skillet with cooking spray and heat over medium heat.
  7. Pour eggs into the skillet and cook until cooked through.
  8. To assemble the breakfast bowls, place a scoop of roasted vegetables in a bowl, top with breakfast sausage and eggs, and enjoy!
