This quick and easy air fryer veggie and egg scramble is a great way to get your day started. It's packed with protein and healthy fats, and it's Whole30 and Paleo compliant.

Ingredients
1 tablespoon olive oil
1/2 onion, chopped
1/2 bell pepper, chopped
1 zucchini, chopped
1/2 cup mushrooms, chopped
1/2 cup spinach
6 eggs
1/4 cup almond milk
Salt and pepper to taste
Instructions
Preheat your air fryer to 400 degrees F (200 degrees C).
In a large bowl, combine the olive oil, onion, bell pepper, zucchini, mushrooms, and spinach.
Season with salt and pepper to taste.
Spread the veggie mixture into the air fryer basket and cook for 10 minutes, or until the veggies are tender.
In a separate bowl, whisk together the eggs and almond milk.
Season with salt and pepper to taste.
Pour the egg mixture over the veggies in the air fryer basket.
Cook for an additional 10 minutes, or until the eggs are set.
