Ingredients
1 cup almond flour
1/2 cup coconut milk
2 eggs
1 tablespoon maple syrup
1 teaspoon vanilla extract
1/2 teaspoon baking soda
1/4 teaspoon salt
1 tablespoon coconut oil, melted
Instructions
Preheat your air fryer to 350 degrees F (175 degrees C).
In a large bowl, whisk together the almond flour, coconut milk, eggs, maple syrup, vanilla extract, baking soda, and salt.
Stir in the melted coconut oil.
Pour 1/4 cup of batter into the center of the air fryer basket. Flatten the batter slightly with a spatula to form a circle about 4 inches in diameter.
Cook for 5-7 minutes, or until the waffle is golden brown and cooked through.
Repeat with the remaining batter.
Serve with your favorite toppings, such as fruit, whipped coconut cream, or maple syrup.
