Air Fryer Caprese Egg Cups with Basil
These Caprese Egg Cups are a flavorful and easy way to start your day or enjoy as a snack. They are made with just a few simple ingredients, including eggs, sun-dried tomatoes, basil, Parmesan cheese, and bacon. The egg cups are baked in an air fryer until the eggs are set and the bacon is crispy. They are then garnished with fresh basil leaves and served warm.
The Caprese Egg Cups were inspired by the classic Italian Caprese salad, which is made with tomatoes, mozzarella cheese, and basil. I wanted to create a version of the salad that was easy to make and portable, so I decided to bake the eggs in muffin cups. The result is a delicious and satisfying breakfast or snack that is perfect for on-the-go.
