Roasted Veggie and Sausage Skillet Scramble

Ingredients
  • 1 pound breakfast sausage
  • 1 red bell pepper, chopped
  • 1 green bell pepper, chopped
  • 1 zucchini, chopped
  • 1 yellow squash, chopped
  • 1/2 onion, chopped
  • 1/4 cup chopped fresh parsley
  • 1/4 cup chopped fresh cilantro
Instructions
  1. Preheat air fryer to 400 degrees F (200 degrees C).
  2. In a large skillet, brown the sausage over medium heat. Drain off any excess grease.
  3. Add the bell peppers, zucchini, squash, and onion to the skillet and cook until softened, about 5 minutes.
  4. Stir in the parsley and cilantro.
  5. Season with salt and pepper to taste.
  6. Pour the mixture into the air fryer basket and cook for 10 minutes, or until the vegetables are tender and the sausage is cooked through.
