Ingredients
1 tablespoon coconut oil
1 onion, chopped
2 carrots, chopped
2 celery stalks, chopped
1 cup shiitake mushrooms, sliced
1/2 cup coconut milk
3 cups chicken broth
1/4 cup miso paste
Instructions
Heat the coconut oil in a large saucepan over medium heat.
Add the onion, carrots, celery and mushrooms to the pan and cook until softened, about 5 minutes.
Stir in the coconut milk and chicken broth and bring to a boil.
Reduce heat to low and simmer for 10 minutes.
Stir in the miso paste and cook for 1 minute more.
