Moonlight Miso Soup

Ingredients
  • 1 tablespoon coconut oil
  • 1 onion, chopped
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 1 cup shiitake mushrooms, sliced
  • 1/2 cup coconut milk
  • 3 cups chicken broth
  • 1/4 cup miso paste
Instructions
  1. Heat the coconut oil in a large saucepan over medium heat.
  2. Add the onion, carrots, celery and mushrooms to the pan and cook until softened, about 5 minutes.
  3. Stir in the coconut milk and chicken broth and bring to a boil.
  4. Reduce heat to low and simmer for 10 minutes.
  5. Stir in the miso paste and cook for 1 minute more.
  6. Serve immediately.
