Feral Frittata

Ingredients

  • 8 ounces uncured bacon, chopped

  • 2 cloves garlic, minced
  • 1 cup broccoli florets
  • 1 cup zucchini, chopped
  • 12 eggs
  • 1/4 cup almond milk
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
Instructions
  1. Preheat the air fryer to 400°F (200°C).
  2. In a large skillet, cook the bacon over medium heat until crisp. Remove the bacon from the skillet and set aside.
  3. Add the coconut oil to the skillet and heat over medium heat.
  4. Add the onion and garlic to the skillet and cook until softened, about 5 minutes.
  5. Add the broccoli and zucchini to the skillet and cook until softened, about 5 minutes.
  6. In a large bowl, whisk together the eggs, almond milk, salt, and pepper.
  7. Add the cooked bacon, onion, garlic, broccoli, and zucchini to the bowl with the eggs and whisk to combine.
  8. Pour the egg mixture into the prepared air fryer basket.
  9. Cook the frittata in the air fryer for 15-20 minutes, or until set and golden brown.
  10. Let the frittata cool for a few minutes before slicing and serving.
