The first time I made this casserole, I was looking for a way to use up some leftover ground breakfast sausage. I had also been experimenting with paleo recipes, so I decided to see if I could make a paleo version of a classic breakfast casserole. The result was this delicious and satisfying dish that's now a regular part of my breakfast rotation.

Why It Works
  • The ground breakfast sausage adds a savory flavor to the casserole.
  • The eggs bind the casserole together and make it fluffy.
