A blissful Waldorf salad made with crisp pieces of celeriac instead of apples and a zingy twist with lemon juice.

Ingredients
- Celeriac
- Celery
- Carrots
- Walnuts
- Mayo
- Lemon
- Salt
- Pepper
Instructions
- Use the slicer attachment on your food processor to slice celeriac. You want them to come out as thin as possible, like potato chips.
- Toss the sliced celeriac with olive oil, salt, and pepper.
- Air fry the celeriac in a single layer at 375°F (190°C) for 10-12 minutes or until crispy. Shake the basket halfway during cooking.
- Place the celery in a large mixing bowl.
- Add the carrots and walnuts to the bowl.
- In a small bowl, combine the mayonnaise, lemon juice, salt, and pepper.
- Pour the dressing over the salad and toss to combine.
- Serve immediately.
