A blissful Waldorf salad made with crisp pieces of celeriac instead of apples and a zingy twist with lemon juice.

Ingredients
  • Celeriac
  • Celery
  • Carrots
  • Walnuts
  • Mayo
  • Lemon
  • Salt
  • Pepper
Instructions
  1. Use the slicer attachment on your food processor to slice celeriac. You want them to come out as thin as possible, like potato chips.
  2. Toss the sliced celeriac with olive oil, salt, and pepper.
  3. Air fry the celeriac in a single layer at 375°F (190°C) for 10-12 minutes or until crispy. Shake the basket halfway during cooking.
  4. Place the celery in a large mixing bowl.
  5. Add the carrots and walnuts to the bowl.
  6. In a small bowl, combine the mayonnaise, lemon juice, salt, and pepper.
  7. Pour the dressing over the salad and toss to combine.
  8. Serve immediately.
