Pineapple Habanero Pulled Pork

Ingredients
  • 2 pounds boneless pork shoulder
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup chopped onion
  • 2 cloves garlic, minced
  • 1 (12-ounce) can pineapple chunks, undrained
  • 1/2 cup habanero pepper, seeded and minced
Instructions
  1. Preheat air fryer to 275°F (135°C).
  2. Trim excess fat from pork shoulder and pat dry.
  3. Rub pork with olive oil, salt, and pepper.
  4. Place pork in air fryer and cook for 45 minutes.
  5. In a bowl, combine onion, garlic, pineapple, and habanero pepper.
  6. Remove pork from air fryer and stir in pineapple mixture.
  7. Cover pork with aluminum foil and return to air fryer.
  8. Cook for 1 hour, or until pork is tender.
