Ingredients
2 pounds boneless pork shoulder
1 tablespoon olive oil
1/2 teaspoon salt
1/4 teaspoon black pepper
1 cup chopped onion
2 cloves garlic, minced
1 (12-ounce) can pineapple chunks, undrained
1/2 cup habanero pepper, seeded and minced
Instructions
Preheat air fryer to 275°F (135°C).
Trim excess fat from pork shoulder and pat dry.
Rub pork with olive oil, salt, and pepper.
Place pork in air fryer and cook for 45 minutes.
In a bowl, combine onion, garlic, pineapple, and habanero pepper.
Remove pork from air fryer and stir in pineapple mixture.
Cover pork with aluminum foil and return to air fryer.
Cook for 1 hour, or until pork is tender.
