Coconut Shrimp Pad Thai is a quick and easy weeknight dinner that's packed with flavor. The shrimp are coated in a crispy coconut coating and then stir-fried with bell peppers, broccoli, and a tangy peanut sauce. The result is a dish that's both delicious and visually appealing.
The inspiration for this recipe came to me on a recent trip to Thailand. I was walking through a night market when I came across a stall selling coconut shrimp. The shrimp were coated in a crispy batter and then tossed in a sweet and spicy sauce. I was immediately hooked. I knew I had to recreate this dish at home. After a few attempts, I finally came up with a recipe that I think is even better than the one I had in Thailand. My version of Coconut Shrimp Pad Thai is made with a few simple ingredients and can be made in under 30 minutes. It's the perfect dish for a quick and easy weeknight dinner.
Prep time: 15 | Cook time: 15 | Serves: 4
Ingredients
1 pound medium shrimp, peeled and deveined
⅓ cup unsweetened shredded coconut
¼ cup tapioca flour
2 tablespoons coconut oil, melted
1 tablespoon lime juice
1 red bell pepper, thinly sliced
1 yellow bell pepper, thinly sliced
1 cup broccoli florets
Instructions
Preheat air fryer to 400°F (200°C).
In a shallow bowl, combine coconut, tapioca flour, coconut oil, lime juice, salt, and pepper.
Add shrimp to the bowl and toss to coat.
Place shrimp in a single layer in the air fryer basket and cook for 8-10 minutes, or until golden brown and crispy.
In a large skillet or wok, heat 1 tablespoon of coconut oil over medium-high heat.
Add bell peppers and broccoli and cook until tender-crisp, about 5 minutes.
Add the cooked shrimp and the remaining ingredients to the skillet and toss to combine.
Cook for an additional 2-3 minutes, or until the sauce is heated through and the vegetables are tender.
Why It Works
The coconut coating gives the shrimp a crispy texture and a slightly sweet flavor.
The peanut sauce is tangy and flavorful, and it complements the sweetness of the shrimp and the vegetables.
The bell peppers and broccoli add a bit of crunch and color to the dish.
This dish is quick and easy to make, and it's perfect for a weeknight dinner.
