These paleo zucchini fritters are a delicious and healthy way to use up any extra zucchini you have on hand. They're made with almond flour and tapioca flour, so they're grain-free and gluten-free. They're also packed with protein and fiber, thanks to the zucchini and egg. Serve them with the avocado ranch dipping sauce for a complete meal.
I first developed this recipe a few years ago when I was looking for a way to use up some extra zucchini from my garden. I wanted to make something that was both healthy and delicious, and these fritters fit the bill perfectly. They're easy to make, and they can be served as a main course or a side dish. I like to serve them with the avocado ranch dipping sauce, but they're also good with your favorite dipping sauce.
Prep time: 15 | Cook time: 12 | Serves: 4
Ingredients
1 medium zucchini, grated
1/2 cup almond flour
1/4 cup tapioca flour
1/4 cup chopped onion
1/4 cup chopped parsley
1 egg
1/2 teaspoon salt
1/4 teaspoon black pepper
Instructions
Preheat the air fryer to 375 degrees F (190 degrees C).
In a large bowl, combine the zucchini, almond flour, tapioca flour, onion, parsley, egg, salt, and pepper. Mix well.
Form the mixture into 1-inch balls. Place the balls in the air fryer basket and cook for 10-12 minutes, or until golden brown and cooked through.
Serve the fritters with the avocado ranch dipping sauce.
Why It Works
The combination of almond flour and tapioca flour gives the fritters a crispy exterior and a tender interior.
The zucchini adds moisture and flavor to the fritters.
