Paleo Zucchini Fritters with Avocado Ranch
These paleo zucchini fritters are a delicious and healthy way to use up any extra zucchini you have on hand. They're made with almond flour and tapioca flour, so they're grain-free and gluten-free. They're also packed with protein and fiber, thanks to the zucchini and egg. Serve them with the avocado ranch dipping sauce for a complete meal.
I first developed this recipe a few years ago when I was looking for a way to use up some extra zucchini from my garden. I wanted to make something that was both healthy and delicious, and these fritters fit the bill perfectly. They're easy to make, and they can be served as a main course or a side dish. I like to serve them with the avocado ranch dipping sauce, but they're also good with your favorite dipping sauce.

  • 1 medium zucchini, grated
  • 1/2 cup almond flour
  • 1/4 cup tapioca flour
  • 1/4 cup chopped onion

  • 1 egg
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
Instructions

Why It Works
  • The combination of almond flour and tapioca flour gives the fritters a crispy exterior and a tender interior.
  • The zucchini adds moisture and flavor to the fritters.
  • The egg helps to bind the fritters together.
  • The salt and pepper add flavor to the fritters.
