Paleo Salmon Patties with Lemon and Dill
These paleo salmon patties are a quick and easy way to get your fish fix. They're made with canned or fresh salmon, almond flour, chopped onion, bell pepper, egg, lemon juice, dried dill, salt, and pepper. Simply combine all ingredients in a large bowl, mix well, form into patties, and cook in an air fryer for 10-12 minutes, or until golden brown and cooked through.
I've always been a fan of salmon patties, but I've never been a fan of the traditional breadcrumb-based recipes. They're always too greasy and heavy for my taste. So I set out to create a healthier, lighter version that was still packed with flavor.

Ingredients
  • 1 pound salmon, canned or fresh
  • 1/2 cup almond flour
  • 1/4 cup chopped onion
  • 1/4 cup chopped bell pepper
  • 1 egg
  • 1 tablespoon lemon juice
  • 1 teaspoon dried dill
  • Salt and pepper to taste
Instructions
  1. Preheat air fryer to 400 degrees F (200 degrees C).
  2. In a large bowl, combine all ingredients. Mix well.
  3. Form mixture into patties.
  4. Place patties in air fryer basket and cook for 10-12 minutes, or until golden brown and cooked through.
Why It Works
  • The almond flour gives the patties a nice nutty flavor and helps to bind them together.
  • The chopped onion and bell pepper add sweetness and crunch.
  • The lemon juice and dried dill give the patties a bright, fresh flavor.
