Air Fryer Shrimp with Coconut and Lime

Ingredients
  • 1 pound shrimp, peeled and deveined
  • 1/2 cup unsweetened coconut milk
  • 1/4 cup lime juice
  • 1 tablespoon coconut aminos
  • 1 teaspoon ground cumin
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup shredded unsweetened coconut
Instructions
  1. In a medium bowl, combine the shrimp, coconut milk, lime juice, coconut aminos, cumin, salt, and black pepper. Toss to coat.
  2. Cover the bowl and refrigerate for at least 30 minutes, or up to overnight.
  3. Preheat the air fryer to 400 degrees F (200 degrees C).
  4. Add the shrimp to the air fryer basket and cook for 10-12 minutes, or until the shrimp are cooked through and pink.
  5. Sprinkle the shredded coconut over the shrimp and cook for an additional 1-2 minutes, or until the coconut is toasted.
  6. Serve the shrimp immediately with lime wedges and your favorite dipping sauce.
