Ingredients
  • 1 pound ground coyote meat
  • 1/2 cup chopped onion
  • 1/4 cup chopped green bell pepper
  • 1/4 cup tomato paste
  • 1/4 cup water
  • 1 teaspoon chili powder
  • 1/2 teaspoon ground cumin
  • 1/4 teaspoon salt
  • 6 paleo-friendly tortillas (such as almond flour or coconut flour tortillas)
Instructions
  1. Preheat the air fryer to 400°F (200°C).
  2. In a large skillet, brown the ground coyote meat over medium heat. Drain off any excess fat.
  3. Add the onion and green bell pepper to the skillet and cook until softened.
  4. Stir in the tomato paste, water, chili powder, cumin, and salt. Bring to a simmer and cook for 5 minutes, or until the sauce has thickened.
  5. Place a tortilla in the air fryer basket and spoon about 1/2 cup of the meat mixture into the center.
  6. Fold the tortilla over the filling and press the edges to seal.
  7. Repeat with the remaining tortillas.
  8. Air fry the calzones for 10-12 minutes, or until golden brown and crispy.
