Why It Works
  • The combination of pork shoulder and tomato sauce creates a harmonious balance of flavors, with the richness of the pork complemented by the acidity and sweetness of the tomatoes.
  • Braising the pork shoulder in the oven allows the meat to become incredibly tender and juicy, while the slow cooking process infuses it with a symphony of flavors from the sauce.
  • The addition of onion, garlic, and oregano adds depth and complexity to the sauce, creating a rich and savory foundation for the dish.
  • The tortellini adds a delightful textural element, providing a delicate contrast to the tender pork and velvety sauce.
