Ingredients
  • 2 medium sized eggplants
  • 3 tablespoons of coconut aminos
  • ¼ cup of rice vinegar
  • 2 tablespoons of sesame oil
  • 2 teaspoon of red chili pepper flakes
  • 2 teaspoons of smoked paprika
  • 1 teaspoon of garlic powder
  • 1/2 cup of chopped fresh parsley
Instructions
  1. Preheat the air fryer to 400°F (200°C).
  2. Cut the eggplants into 1/2-inch thick slices.
  3. In a large bowl, combine the coconut aminos, rice vinegar, sesame oil, red chili pepper flakes, smoked paprika, and garlic powder until well combined.
