Kourambiedes (Greek Christmas Cookies)
Kourambiedes are the quintessential Greek Christmas cookie, and for good reason: they're easy to make, buttery, nutty, and dusted in powdered sugar for a little extra sweetness. If you're looking for a festive treat to make this holiday season, look no further.
Kourambiedes have been a part of Greek Christmas tradition for centuries. The first recorded recipe for kourambiedes appears in a cookbook published in Athens in 1830. The cookies were originally made with ground almonds, butter, and sugar, and they were often flavored with orange zest or cinnamon. Over time, the recipe has evolved to include a variety of different ingredients, including powdered sugar, vanilla extract, and even chocolate chips. Today, kourambiedes are a popular Christmas cookie all over Greece, and they are often served with a glass of ouzo or coffee.

Why It Works
  • The combination of ground almonds and butter gives kourambiedes their characteristically rich and nutty flavor.
  • The powdered sugar dusting adds a touch of sweetness and helps to keep the cookies from sticking together.
  • The egg yolk helps to bind the ingredients together and gives the cookies a slightly chewy texture.
