Grilled Halloumi and Vegetable Skewers
A vibrant and savory appetizer or side dish that combines the salty, squeaky texture of halloumi with crisp-tender vegetables. The skewers are tossed in a simple marinade of olive oil, oregano, salt, and pepper, then grilled until the halloumi is golden brown and the vegetables are cooked through.
Growing up in a Cypriot household, halloumi was a staple in our kitchen. It's a versatile cheese that can be fried, grilled, or baked. I love its unique texture and salty flavor. When I'm craving something savory and satisfying, I often turn to halloumi skewers. They're easy to make and can be customized with your favorite vegetables. I like to use a combination of bell peppers, zucchini, and red onion, but you could also use tomatoes, mushrooms, or eggplant. The key is to cut the vegetables into uniform pieces so that they cook evenly.Once the vegetables are prepped, I toss them in a simple marinade of olive oil, oregano, salt, and pepper. This helps to enhance their flavor and prevent them from sticking to the grill. I then thread the vegetables and halloumi onto skewers and grill them until the halloumi is golden brown and the vegetables are cooked through. The skewers are typically done in 8-10 minutes, but you may need to adjust the cooking time depending on the thickness of your vegetables. Once the skewers are cooked, I like to serve them with a simple dipping sauce, such as tzatziki or hummus.
