The Prairie Dog Pizza Pocket was born out of a desire for a quick and easy meal that was also portable and packed with flavor. I was inspired by the classic pizza pocket, but I wanted to make a healthier version that was also gluten-free and grain-free. After some experimentation, I came up with this recipe for Prairie Dog Pizza Pockets. They are made with a simple dough made from almond flour and tapioca flour, and they are filled with a delicious mixture of ground beef, onions, green peppers, pizza sauce, and mozzarella cheese. The pockets are then air fried until golden brown and cooked through. They are so good, you won't even miss the traditional pizza crust!

Why It Works
The almond flour and tapioca flour create a dough that is both gluten-free and grain-free, making these pockets a great option for people with celiac disease or gluten intolerance.
The ground beef, onions, green peppers, and pizza sauce provide a delicious and savory filling.
The mozzarella cheese adds a gooey and melted texture that makes these pockets irresistible.
The air fryer cooks the pockets quickly and evenly, resulting in a golden brown and crispy exterior.
