Ingredients
1 pound ground bison
1/2 onion, chopped
1/2 green bell pepper, chopped
1/4 cup paleo-friendly taco seasoning
1/2 cup water
12 paleo-friendly tortilla chips
1/2 cup guacamole (see recipe below)
1/4 cup shredded cheddar cheese (optional)
Instructions
Preheat air fryer to 400 degrees F (200 degrees C).
In a large skillet, brown the ground bison over medium heat. Drain off any excess fat.
Add the onion, bell pepper, and taco seasoning to the skillet. Cook for 5 minutes, or until the vegetables are softened.
Add the water to the skillet and bring to a simmer. Reduce heat and cook for 10 minutes, or until the sauce has thickened.
Place the tortilla chips in a single layer in the air fryer basket.
Top each chip with a scoop of the ground bison mixture and a dollop of guacamole.
If desired, sprinkle with shredded cheddar cheese.
Air fry for 5-7 minutes, or until the chips are crispy and the cheese is melted.
